
4 Bell Peppers
1 lb ground beef
1 Onion, diced
2 Cloves garlic, minced
2 tsp dried oregano
½ tsp salt
1 tsp chili powder
1 cup cooked rice
1 cup 14.5 oz diced tomatoes
1 cup Mozzarella cheese, shredded

Cut peppers in half lengthwise, remove the seeds and set aside.

Heat a large skillet on med heat, add the beef and cook until no longer pink. Remove the beef from the pan and set aside.

Add the onions and garlic to the pan and cook until the onions are translucent.

Return the beef to the pan, add the seasoning, cooked rice, and tomatoes.

Stir and cook until heated through.

Spoon the beef mixture into each pepper half and place it in the Handi-Foil pan.

Sprinkle each pepper with shredded cheese.

Place in the oven and bake at 350 degrees for 25-30 minutes until peppers are soft and cheese is melted and slightly browned.
