Preheat oven to 450F and collect all ingredients. Use a full-size or half-size steam table pan.
Coat the bottom of your pan with 3 tbsp vegetable oil. Then toss together cooked rice, green onion, mixed veggies, garlic, ginger, soy sauce, eggs, apple cider vinegar, and sesame oil until the rice is completely coated.
Then add and toss slices of sausages and with the rice.
Spread the rice evenly on the pan and bake for 15 minutes.
Use a spoon or spatula to scrape up the rice then spread it out evenly again before return the pan back to the oven and cook for another 10 minutes.
Taste and adjust seasoning with salt & pepper. Serve hot immediately.
