
1 lb ground beef
1 med onion chopped
1 large eggplant
1 lb canned Spanish rice
1 can 13oz diced tomatoes
1 13oz can sliced mushrooms (drain)
2 cups grated sharp cheddar cheese

Brown ground beef with chopped onions (drain.)

Peel and dice eggplant (boil until tender and drain.)

Mix ground beef, eggplant, Spanish rice, tomatoes & mushrooms.

Put into baking pan. Sprinkle with grated cheese.

Bake at 350 degrees for 1 hour or until golden brown.
