
610 chicken drumsticks
¼ cup olive oil, divided
1 tsp paprika
½ tsp ground thyme
½ tsp black pepper
½ tsp salt
½ tsp garlic powder
2 lbs potatoes, peeled and cut into chunks
23 carrots, peeled and cut into chunks

Preheat oven to 400 degrees and collect all the ingredients

Prepare 2 large sheet pans with aluminum foil for easy cleanup. Spritz with non-stick cooking spray.

Rub the chicken drumsticks with about ⅛ cup olive oil.

Mix together seasonings and divide in half. Rub half of the seasonings on the chicken drumsticks. Place chicken drumsticks on a sheet pan.

Place vegetables in a large bowl and drizzle with remaining olive oil. Toss to coat.

Add remaining seasoning mixture and toss again. Place vegetables on a sheet pan.

Cook for 50 to 60 minutes or until the chicken is cooked through and the vegetables are roasted to your desired doneness.
