Sift dry ingredients together. Add eggs and oil and beat.
Add carrots and mix well. Pour into greased and floured (3) round cake pans. Bake at 375 degrees F for approximately 30-35 minutes or until done.
Frosting: mix cream cheese, butter or margarine, and vanilla together. Add powdered sugar and mix well. Spread over cooled cake.
