In a bowl, mix flour and salt. Cut in shortening until shortening particles are the size of giant peas.
Sprinkle with water, a tbsp. at a time, mixing lightly with a fork until all the flour is moistened. Press into a smooth ball.
Roll out dough on floured board or place between 2 pieces of wax paper.
Fit pastry into pie pan and build up a fluted edge. Prick dough in pan thoroughly with a fork. Bake until golden brown at 475 degrees F. approximately 8-10 minutes.
