Season both sides of the loin slices with salt, pepper, and smoked paprika. Wrap each slice in strips of bacon, secure with a toothpick if needed.
Place the bacon wrapped pork loins on a broiler pan and bake at 350 F for 35 minutes. Check the internal temperature at this time. If it is at 150 F, proceed with the broiling step.
When the bacon wrapped pork loins are done, place them under the broiler on high for 3-5 minutes per side to crisp up the bacon. Remove them from the oven and let them rest under a sheet of aluminum foil while you make the sauce.
Chop the cilantro and add it to the sour cream, and heavy cream, and mix thoroughly. Next, add the onion powder, white pepper, and dill.
Stir until everything is evenly mixed.
Serve the bacon-wrapped loin slices with the Cilantro Dill sauce drizzled over them.
