Black Bean Mexican Pizza


4-6 Servings




1 (10 oz.) can Pillsbury refrigerated all-ready pizza crust
1 (15 oz.) can black beans
3 T. olive oil
2 T. chopped fresh cilantro
1 tsp. cumin
1/2 tsp. minced garlic  
1 c. shredded Monterey Jack cheese
1 c. shredded cheddar cheese
1 (2-1/4 oz.) can sliced olives, drained
1/2 c. diced red bell pepper  
1/4 c. sliced green onions
1/2 c. sour cream  
1/4 c. taco sauce

Cooking Instructions:

Heat oven to 425 degrees. Lightly grease 9 x 13 pan.

Unroll dough and place in greased pan; starting at center, press out with hands. Bake for 7-10 minutes or until light golden brown.

In food processor with metal blade, combine beans, oil, cilantro, cumin and garlic. Process until smooth, frequently scraping down sides of bowl. (Mixture can be mashed with fork, but it won't be as smooth).

Spread bean mixture over partially baked crust. Sprinkle with cheeses, olives, bell pepper and onions.

Bake for 7-12 minutes or until crust is deep golden brown and cheese is melted.

In small bowl, combine sour cream and taco sauce; blend well. Serve pizza with sour cream mixture.
