Date and Nut Bread

Ingredients:

1 cup dates (pitted & chopped)
1 cup water or 7-up  
1 tsp. baking soda
1 tbsp. butter or margarine
1 egg  
3/4 cup firmly packed brown sugar
1-3/4 cups flour
1 tsp. vanilla
1/2 cup chopped nuts
1/4 tsp. salt (optional)

Cooking Instructions:

Bring dates and water or 7-up to a boil. Add baking soda and set aside to cool. Combine the remaining ingredients together. Beat well.   

Add date mixture and mix well. Pour into a greased loaf pan. Bake at 350 degrees F for one hour or until done.
