Carrot Pineapple Bread

Ingredients:

3 eggs
2 cups sugar
1 cup vegetable oil
1 cup finely grated carrots
1 8 oz. can crushed pineapple, undrained
2 teaspoons vanilla
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoo cinnamon
3 cups flour

Cooking Instructions:

Beat first 3 ingredients together. Add next 3 ingredients and mix well. Combine dry ingredients and beat into mixture.

Add oats to top if desired.


Pour into greased pans and bake at 325.

Two 8 x 4 foil pans, 60-70 minutes
Five 5 x 3 foil pans, 50-55 minutes
