Carrot Cake

Ingredients:

2 cups flour
2 cups sugar
2 tsp. baking soda
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
4 eggs
1-1/2 cups salad oil
3 cups grated or finely chopped carrots

Frosting:
8 oz. pkg. cream cheese
1/2 cup butter or margarine
1 tsp. vanilla
1 lb. powdered sugar

Cooking Instructions:

Sift dry ingredients together. Add eggs and oil and beat.

Add carrots and mix well. Pour into greased and floured (3) round cake pans. Bake at 375 degrees F for approximately 30-35 minutes or until done.  

Frosting: mix cream cheese, butter or margarine and vanilla together. Add powdered sugar and mix well. Spread over cooled cake.
