Brown Sugar Pecan Muffins

2 cups flour
1 cup sugar  
1 tsp. baking soda  
3/4 tsp. cinnamon
1/4 tsp. salt
1/2 cup chopped pecans
1 cup buttermilk
1/2 cup canola oil
1 large egg
1/2 tsp. maple extract

1/2 cup packed dark brown sugar
3 tbsp. unsalted butter, melted
1/4 cup finely chopped pecans

Cooking Instructions:

Brown sugar, butter and pecans form a thin crust on the  muffins.

Heat oven to 375 degrees F.

Put flour, sugar, baking soda, cinnamon, salt and pecans in large bowl and mix.

Whisk together buttermilk, oil, egg and extract in small bowl. Add egg mixture to dry ingredients; stirring until just combined.

Scoop into greased or lined muffin pans. For topping: combine brown sugar and butter in small bowl until smooth. Spoon over each muffin and sprinkle each with pecans.

Bake until toothpick inserted in center comes out clean (approx. 20 minutes). Cool.
